CEIMB: Tuscan Roasted Chicken with Vegetables


Okay, I am really sorry about these bad pictures. I don't know why, but for some reason it was darn near impossible to get good shots of this meal. And that is quite a shame; the pictures do not do the food justice!

For this week's Craving Ellie in My Belly dish, Margaret of Tea and Scones selected Tuscan Roasted Chicken with Vegetables. I was looking forward to this; I just recently have come to love roasted tomatoes and roasted zucchini, and this recipe includes both. Plus, there's roasted fennel (love fennel!) and lots of fresh lemon flavor and sprigs of rosemary. All the makings of a fabulous meal were there.



For some reason, this one kinda disappointed me. I can't exactly put my finger on why. For starters, I did use a whole 4.5 pound chicken rather than the bone-in chicken breasts that Ellie used. I added onions to the veggies; we just love roasted onions. Because the chicken took about 2 hours to roast, I set it in the roasting dish and cooked it for an entire hour before adding the veggies. The veggies still ended up a little overdone, I thought. The zucchini virtually fell apart when I used tongs to lift it out, so much that I couldn't get many full pieces of zucchini to serve. Same with the tomatoes; they were just a mushy mess.

The onions and fennel held together well, though! And the flavor of the chicken was very good. Lots of fresh rosemary, garlic, and lemon was stuffed into the cavity of the bird, so Ellie's flavors were definitely reflected there. I don't know; I just think in the future I will try roasting different veggies with the chicken, ones that are sturdier. Or, I could roast them for an even shorter time.

Meatless Mondays: Red Pepper Fennel Soup


Wow, this is two Meatless Mondays in a row! This could be habit-forming. I have to say, I have been enjoying it. I can get a little tired of chicken and then chicken, so it's always great to find ways of preparing meat-free meals that are just as satisfying.

This soup is perfect for filling you up on a cold night. We've been getting hit with some snow this past week, and I tend to crave soup when the temperatures drop (or drop even lower than they were before!). I found this Red Pepper Fennel Soup on Food.com, and it was cited as having come from Rachael Ray's September 2007 magazine. I could not find this soup on Rachael's official website, though, so I have provided the link to the Food.com version down at the bottom of this post with my take on the recipe.



The soup starts with a leek and a bulb of fennel as its base. Since these are two vegetables we love to eat when we can get our hands on them, I figured we were off to a good start. I roasted my own red peppers for this; I feel like it's worth the extra time to do that instead of using a jar of roasted peppers. Fortunately, I actually did have enough extra time to do it this time! That's not always the case.

So you throw in your sliced red peppers, along with a sliced potato, broth, and some seasonings (I added fenugreek because I had just purchased some for the first time the day before I made this. I was looking for just about any excuse to try it out!). Let everything come up to a boil and simmer until the potato has cooked through. Then you pull out your immersion blender and puree the veggies. It becomes so thick and luxurious, and then you make it even more luxurious with the help of some heavy cream. I didn't want too much; the original version called for 1/2 cup, but I just put in 2 Tbsp. It was just enough for me. It made the soup slightly creamy without adding tons of fat.

To go alongside, you whip up some homemade pita chips in the oven. It's so easy; I do it every now and then, experimenting with different ways of seasoning them. This time, they had a mix of salt, pepper, fenugreek, and some fennel fronds on them. I overcooked them by a minute or two, so they were slightly charred. I thought that was actually pretty good in this case, since it matched well with the charred red peppers. I thoroughly enjoyed this meal, and was plenty full after one bowl. All that, and it was meat-free! Not shabby at all.




Red Pepper Fennel Soup

makes 4-6 servings

Ingredients

2 roasted red peppers, thinly sliced lengthwise

1 1/2 Tbsp. olive oil

1 leek, thinly sliced crosswise (white parts only)

1 small fennel bulb, with fronds, bulb finely chopped and fronds chopped for garnish

1 (1/2 lb.) potato, peeled, halved, and thinly sliced

2 cups chicken broth

1/2 tsp. fenugreek, plus more to taste

salt and pepper, to taste

3 pita bread, split and cut into wedges

2 Tbsp. heavy cream

Directions

1. Preheat the oven to 400 degrees F. In a medium Dutch oven, heat 1/2 Tbsp. olive oil over medium heat. Add the leek and chopped fennel bulb and cook until lightly golden, about 10 minutes.

2. Add all the roasted pepper strips except 4-6, leaving the remaining 4-6 for garnish. Add in the potato, broth, salt, pepper, and 1/2 tsp. fenugreek and bring to a boil. Lower the heat and simmer, partially covered, until the potato is tender, about 10 minutes.

3. Meanwhile, place the pita wedges on a baking sheet and toss with the remaining 1 Tbsp. olive oil. Sprinkle salt, pepper, a few fennel fronds, and fenugreek seasoning over the wedges and toss to coat. Toast in the oven, 6-8 minutes, until crispy. Set aside to cool.

4. Once the potato in the soup has softened and cooked through, use an immersion blender to puree the soup (or puree in a blender, in smaller batches). Stir in the heavy cream and season with salt and pepper. The soup can be served hot or cold, with the reserved red pepper strips and fennel fronds on top for garnish. Serve the pita chips alongside, for dipping.

Fennel, Onion, and Pepper Pizza


I came up with the idea for this pizza one day when I was trying to decide on a meatless dinner. I like the idea of doing Meatless Mondays, which is a non-profit initiative with a goal of reducing meat consumption by 15%. We do go meatless at least once a week already, I believe, so it definitely would not be difficult to manage. I haven't officially signed up to be a part of the Meatless Mondays movement, but as of right now I'm giving it a trial run on my own! This is my first blog post about my efforts.



I had some very attractive red onions and sweet green peppers on hand, and when I ran by the grocery store, I saw that fennel was only 99 cents a pound. Score! The idea for this pizza was born then. I went home and got to work. I sauteed the veggies together in a skillet until they were all soft and sweet. Meanwhile, I had set up a basic whole-wheat pizza dough to form in the bread machine. When that was ready, I spread it out to fill a round pizza pan. The next step, I admit, is a strange one, but bear with me here!




I was trying to make this a bit lower in fat, so I decided to try spreading some soft cheese all over the crust of the pizza. I had a bunch of Laughing Cow spreadable cheese that I had been wanting to use up. It's only 2 grams of fat per wedge, but I have found that if I just spread it on crackers or something, it tastes a bit synthetic and fake. I thought perhaps I could mask this by throwing a bunch of delicious vegetables on top of it! I used about 2 wedges to spread on the crust, and then I diced another wedge to scatter across the top.

Crazily enough, this actually worked! I thought the cheese was creamy, tasty, and blended well with the other flavors on the pizza. I had used the French Onion variety of the cheese, but I'm sure any of the other flavors would work just fine.




Fennel, Onion, and Pepper Pizza

serves 3-4


Ingredients

1 whole-wheat pizza dough

1 small bulb fennel, sliced thinly (discard the green tops, but reserve some of the fronds)

1 red onion, sliced thinly

1-2 sweet green peppers, sliced thinly

2 cloves garlic, minced

Salt and pepper, to taste

Nonstick cooking spray

Cornmeal, for dusting

3-4 wedges Laughing Cow spreadable cheese, any variety


Directions

1. Preheat oven to 400 degrees F. Heat a large skillet to medium heat. Spray with nonstick cooking spray and add the fennel, onion, and green pepper. Saute for about 5 minutes, stirring occasionally. Add salt and pepper as desired, as well as the garlic. Cook for an additional 3 or 4 minutes, until the veggies are softened. Turn the heat off and set the skillet aside.

2. Dust a foil-lined pizza pan with cornmeal, then stretch the pizza dough into a circular shape, to fit the pan. Spread 2 or 3 wedges of the cheese across the surface of the crust, leaving a 1/2-inch border around the edge. Scatter your veggies evenly around the pizza, and then add an additional wedge or so of the cheese, cut into small pieces, across the pizza.

3. Bake the pizza in the oven for about 15 minutes or so, until the pizza dough is cooked through and the cheese has become slightly browned on top. Cut into wedges and serve.
